Grammy Award-winning singer-songwriter, actress and author, Ashanti, performed the recent single, “The Woman You Love,” from her upcoming album, “Braveheart,” on the Live! stage. The single is available now and the album will be out in Fall 2012.

Ashanti is not only a talented performer, but she’s also a terrific cook and fierce competitor, who narrowly missed winning our “Grilling with the Stars” competition the last time she played. Ashanti is our fourth celebrity contestant in “Grilling with the Stars” preparing her Grilled Pineapple Chicken Kabobs.

The winner gets $25,000 for the charity of their choice. Ashanti’s charity of course is The Boys and Girls Club of America.

Recipe for Ashanti’s Grilled Pineapple Chicken Kabobs:

INGREDIENTS:
1 T Old Bay
1 T Lemon Pepper
1/2 t Garlic Salt
1/2 t Garlic Pepper
1 T Sazon for Chicken
1/4 C White Vinegar
2 lbs Boneless Chicken Breast (cubed)
2 Red Onions (quartered)
2 Yellow Onions (quartered)
1 Red Pepper (quartered)
1 Green Pepper (quartered)
1 Yellow Pepper (quartered)
8 Large Pineapple Chunks
1 Lemon
1 Lime

DIRECTIONS:
In a small bowl mix Old Bay, lemon pepper, garlic salt and garlic pepper. In a medium bowl mix vinegar and sazon. Sprinkle chicken with spice mix and add to sazon mixture. Add the onions and peppers to marinade 1 hour in refrigerator. Thread chicken, vegetables and pineapple on skewers. Baste finished kabobs with marinade and grill until done. Serve with lemon and lime wedges to squeeze on kabobs.
